Here's some I know, right off the top:

CTRL+O = Open
CTRL+S = Save
CTRL+F4 = Close "Document" Window
ALT+F4 = Close Application
CTRL+X = Cut
CTRL+C = Copy
CTRL+V = Paste
F12 = SaveAs
F1 = Help
