Very short definition from Bertrand Meyer, who designed Eiffel (most
likely the best production language, streets ahead of Java):

"Object-oriented design is construction of software systems as
structured collections of abstract data implementations, or
'classes'."

He also said:

"'Object-Oriented' is a misnomer; 'Class-Oriented Analysis, Design and
Programming' would be a more accurate description of the method."
