Now I've tested it again. That is, I manually re-associated .e, .ex, .ew, and .exw files with my favourite Editor, and then I installed Eu 3.0.0 again. This time, the Eu installer didn't touch the associations! I believe previously there has been an error in my registry, maybe due to an over-aggressive Registry Cleaner, or maybe I had played too much with the registry.
