Honestly, sounds like you're trying to run, rather than taking baby steps (not making fun of your situation. I know the difficulties you have).

Select one sensor, and one actuator to start with and play with that. That's complex enough in itself. sense the stuff, measure the stuff, store the stuff, send you a message about the stuff, act on the stuff.

I can help with the Pi, but the real world interfacing sounds like it needs a lot of playing with on site..
