How's this? Getting User-Defined Languages to work with dark themes is kinda tricky. You have to enable a global background color otherwise it looks really weird.
- Go to Language > Define your language... and import this UDL file: euphoria-dark.xml, close the UDL dialog
- Go to Settings > Style Configurator... and select a dark theme (I like Solarized, works well with my choice of dark colors)
- Select Enable global background color then click Save & Close. Et volia!

Apparently Notepad++ added dark mode back in June 2021 but I didn't notice until recently.
I've updated the editors project with new syntax files to properly support dark mode:
