What is the difference between .e and .ew?
From what I can see the both do the same thing.

There is no difference.
There was a convention that .e was to be used for console or generic includes, and .ew for Windows app includes, but Euphoria never enforced this. It was just a stylistic thing.
There is no magical thing about either. One can include any file regardless of what its extension is.
include mystuff.xyz -- Valid include
